Hungry Hippie Tacos

Owners Kate and Jeremy Keeble began their taco journey when they opened their first Hungry Hippie Tacos location in Grand Marais – featuring the signature northern frybread tacos.

So, when the opportunity for a second location with a larger outdoor seating area in Duluth's Lincoln Park district came up, they called on us to help with everything from code requirements, schematic renderings and architectural design of their new space. Since the building was previously an animal clinic, this project required a change of occupancy and use. In other words, it was a head-to-toe renovation that required new insulation, a new façade, and the addition of an exterior stair to the basement, just to name a few of the major updates.

Best of all, we designed every corner of this space with future overflow, pandemics, and growth in mind by including an area for two point-of-sale stations, a walk-up window, a large kitchen, and even space for the addition of a third bathroom down the road.
